What category do artichokes fall under? Veggies?

Good question. Technically the part we eat is a bud that if left on the plant will later produce flowers. A fruit is the ripened ovary of the plant. Something this clearly is not, so it isn't a fruit. A vegetable is edible plant material (which would include fruits) which this most obviously is. So I would say the short answer to your question is yes.
